One of the best superfoods out there for people wanting to lose weight is cottage cheese! Yet, most of my clients don't like it. So over the last decade I have spent way more time than I care to admit trying to make cottage cheese tastier. Tonight, I may have stumbled upon something!
I took 16 oz. of low-fat 2% cottage cheese and mixed in it 1 TBS basil, 1TBS oregano, and 1/2 TBS thyme. A splash of salt and voila! I had an Italian seasoned dip.
My kids and I ate it on melba toast with some diced raw tomatoes like it was bruschetta - because we are so very fancy like that. But the possibilities really are endless. Dipping veggies would be good, a topping for a small baked potato, a scoop on top of a salad, or spread on a small tortilla with diced tomatoes and broiled for a moment like a thin crust pizza. YUM!!!
